This beautiful Otago Pinot Noir is blossoming with aromas of leather, tobacco, some smoke, earth, dried cranberries and prunes, and blackberries. Clean, invigorating notes of silex on the nose showcase the limestone soils of the Rouanne vineyard. The aromas and flavors develop as the wines opens to reveal wild strawberry and fresh thyme – a complex and flavorful sparkling rosé.

This has a very nice, frothy mousse. It's more of a crisp, clean, minerally style, not very fruity, but not austere either. Notes of lemon, stone and biscuit can be found in this finely-textured, persistent Champagne.

The wine spends around a year on its lees before disgorgement with the result being a more youthful and fresh wine than Champagne which is lively and strikingly aromatic. Tropical fruits are more prevalent here with pineapple, glazed stone fruits and mango flavours. Hints of hazelnuts and sweet spice conclude beautifully on the palate.

This Cremant is very mineral and clean with a lovely, vibrant frothiness. The fruit is subtle with hints of blood orange and lemon confit, with notes of toasted hazelnut enhanced by a leesiness from aging 20 months in bottle.

Earthy notes of foraged mushrooms, dandelions, dry figs, high quality soy sauce and pineapple.
