The palate is medium weight with strawberries, berry seeds, violets, mineral and camp fire. It has a softer structure than you might expect from Nebbiolo, with integrated acidity and tannins. A long, balsamic finish completes the package.

Spirits

The primary flavors of Cardamaro are cardoon and blessed thistle, with a short repose in oak for spice and and texture. Notes of brown baking spices of cardamom and cloves, ginger and sassafras. Sweet with an herby bitterness from the cardoons. Drink as a digestif. In cocktails, outstanding with cider, whiskey, or use in place of vermouth.

Vermouth

Aromas of cinnamon and gingerbread cookies mix with orange and apple. This is nicely round and viscous in the mouth without being heavy. The palate is reminiscent of molasses-ginger cookies with darker, cooked apple and burnt orange fruits blending with baking spices such as cinnamon, nutmeg and clove. Lightly sweet with a kiss of pleasant bitterness. YUM!
