Fragrant grapefruit, smoke, flint, and tropical fruit waft from this Vin de France, while it is not labeled as such, this VdF is from Chablis. The palate follows the nose with dense ripe citrus fruit and peel, mango, yellow plum, and some herbal notes.
This wine is labeled Vin de France because of an administrative error and red tape related to the Chablis appellation. The winemakers, Eleni and Édouard Vocoret, accidentally missed a deadline for declaring their "Bas de Chapelot" wine, and as a result, they were forced to bottle the remaining barrels with a less restrictive "Vin de France" designation instead of the "Chablis" AOC.
Despite that, the grapes still come from the small parcel "Bas de Chapelot" in the Premier Cru appellation of Montee de Tonnerre. Eleni and Edouard’s approach in the cellar is consistent across all the wines. Alcoholic and malolatic fermentation is done in stainless steel with natural yeast. The wines are then aged for one year in old barrels. Before bottling the wines are put back in tank for an assemblage of one or two months. Bottled unfined and unfiltered with minimal sulphur addition.
