The nose offers black cherry and blueberry fruit, black olive, spice and touches of iron/earth. Dark fruit continues on the palate with present, but well-integrated tannins, touches of bittersweet chocolate and a juicy black cherry linger on the finish.
Ch. d’Oupia was created by André Iché, an iconic winemaker largely responsible for the creation of the Minervois AC in 1973. He bought fabulous sites in the region, often for one franc, turning them into outstanding vineyards. He wound up with about 150 acres. Half of the wine is fermented in barrel with a maceration of 30 days, the other half is made by carbonic maceration.
