Les Hérétiques is a bold and slightly rustic wine, speaking strongly of its terroir. The nose offers spice, cedar, and black berry fruit, all kissed by earth. Black berries continue in the mouth, joined by black cherries, plums, and spice. The wine is medium plus in body with ripe tannins and plenty of character.
Ch. d’Oupia was created by André Iché, an iconic winemaker largely responsible for the creation of the Minervois AC in 1973. He bought fabulous sites in the region, often for one franc, turning them into outstanding vineyards. He wound up with about 150 acres. Half of the wine is fermented in barrel with a maceration of 30 days, the other half is made by carbonic maceration.
