Tasting Notes

Aromas are round and rich with pronounced minerality accompanied by candied lemon, apricot peel, and Asian pear.  The palate is bone dry with citrus and anise joined by salinity to give impeccable freshness. 


This exciting Finger Lakes wine is a project between Louis Barruol of Chateau St. Cosme in the Rhone, France and two American partners. The grapes were hand-harvested from 10 vineyard sites, rigorously sorted and fermented with indigenous yeast. The wine was aged 20% in stainless steel and 80% in neutral French barriques.
