WINE INFORMATION

Bodega Sierra Norte was established in 1914 in Camporrobles, in Utiel-Requena, Valencia. They farm 322 hectares of vineyards and mainly focus on their native Mediterranean varieties, Bobal and Monastrell. They also produce Tempranillo, Macabeo and Verdejo. The estate practices and is certified for organic viticulture.

Together with the Universidad de Valencia, Bodega Sierra Norte continues several research and development projects aimed on the study of organic and sustainable viticulture and clonal selection of the Bobal grape as well as the study of the use of indigenous yeast.

The grapes for this wine are sourced from vineyards located in Campo la Estrecha and Pozo Viejo with limestone-rich soils and grown in a balanced, caring and sustainable way. The average age of the vines is 40 years.

After harvest, grapes undergo pre-fermentation maceration before pressing in order to extract more aromas a full mouth. Then there is a gentle pressing for the extraction of the free-run juice. After that the most goes through fermentation at a low temperature, followed by an ageing of the wine in the tank with its fine lees for 2 months with weekly stirring-up of the lees to add complexity.
