Domaine Fourrey et Fils is a family estate of 20 hectares with 18 in production in the heart of Chablis. It is currently run by the 4th generation father to son. Since 1992, son Jean-Luc has been in charge of wine-making with his parents after his studies in Lycéee de Beaune, where he obtained a degree in enology. The family pays detailed attention to each of the plots and tries to minimize fertilizer use. The vineyards are planted with cover crops and worked manually. Grapes are hand-harvested from 15-year-old vines.
TASTING NOTES
Very classic aromas of cherries, raspberries, incense and flowers. On the palate this wine is pure and very true to Pinot Noir: raspberry tea, cherries, strawberries, rose petals flavors come alongside dusty cocoa and black peppercorns. It is medium in body with medium acidity, tannins and finish.
FOOD PAIRING
Enjoy with roasted chicken, pork, ham, or turkey. Roasted vegetables, meatier fish, quiche, or cassoulet also work well.
