This traditional sparkling half bottle is full of butter biscuit aromas with some membrillo on top. There are notes of blueberry and whipped cream with soft citrus and yellow apple notes. The palate has a bursting bead with white pepper and more blueberry, white flowers with a long mineral finish.

Classic aromas of fresh biscuits and brioche smothered in lemon curd and quince jam with additional aromatics of strawberry and minerality. The palate has a persistent bead throughout the mouthfeel and carries cheerful flavors of confection, yellow plum, lemon zest, and fresh linen which immediately is focused, lovely and celebratory. The mineral note follows through on the palate with something akin to wet clay. This is starbright and not super effervescent with a mellow frothy finish.

Concentrated aromas of apple, brioche, peaches, white raspberry, melon and poached pear that reminds one of a creamy apple tart with cream. The flavor is so creamy and good with apricot, butter cream, vanilla, with a soft mouse that prickles and lingers without being aggressive. There is some browned butter and membrillo jam on the finish.
