Soil in Toro is low in organic matter, a mix of sand and alluvial gravel with red clay at a depth of ~7’. Grapes for this wine were organically-grown and come from two vineyard sites planted between 1920 and 1961. Grapes were hand-harvested and fermented in stainless steel with native yeasts. The wine is then transferred to Burgundy and Bordeaux barrels for malolactic fermentation and eight months’ age. Triton was the son of Neptune; as gods of the water, they were often depicted on stallions.
This winery is owned by famed importer, Jorge Ordonez, and like all of his projects, he produces wines that are modern, but authentically reflect Spanish spirit and terroir.
