Light aromas of apple, lemon zest and ripe lemon juice. The palate has savory elements and a little note of ripe apple. There is some creaminess that softened along with the acidity to allow some tropical notes and vanilla with a juicy finish. 

From the Supplier:  We always say you have to love rocks to love this wine! It is remeniscent of wet stone on the nose with a linear precision on the palate balanced by a charming fruit profile of yellow pears and citrus. Always a top Burgundian value!

Oliver Morin produces two cuvées of Chitry. Both come from the domaine's own sustainably farmed vineyards, which are plowed and grass-covered. The wines are vinified with native yeasts and aged on the lees in stainless steel tanks. Constance comes from younger vines and is released early with a fresh and light profile, while Olympe comes from older vines and is aged for at least 18 months in barrels to create a richer, fuller wine. If one wanted to simplify, one could say that Constance is the village wine, and Olympe the 1er cru.

The vineyards are on Portlandian clay-limestone soils of the Jurassique Supérieur epoch. Soils are worked manually so the roots plunge deeply. No chemicals are used, grapes are hand harvested. Grapes are gently pressed, wines aged on lees. Vinified with little SO2 using natural yeasts. Fermented in tank. The wine is bottled with no filtration.
