Tasting Notes

Bursting with layers of ripe pineapple, starfruit, kiwi, and mango, the palate is bright and appealing.  Subtle sweetness up front is delicately balanced for a clean, fresh finish, and is ideal for flavorful, spicy cuisine.

Fermentation is in stainless steel, mostly with Epernay II yeast at moderate temperatures. Fermentation is stopped with some residual sweetness. The wine is then fine tuned and finished using the traditional method of adding back small amounts of unfermented Riesling juice reserve to the wine after fermentation.  2.1% final residual sugar, total acidity 7.2 grams per liter.

Red Newt is owned by Winemaker David Whiting. He purchases all of the fruit for the winery through long-term contracts with growers.
