Noticeable aromas of red cherry, plum, raspberry and spice. On the palate this wine is dry with darker flavors than the nose would lead us to believe: blackberry, licorice root, and black cherry. This wine is well-structured with fine tannins, and a hint of charming rusticity.

Cabardès is an Appellation d'Origine Protegée (AOP) for red and rosé wine in the Languedoc-Roussillon wine region in France. Cabardès was named after the Lords of Cabaret who defended the Châteaux de Lastours against Simon de Montfort in 1209. Despite the name's medieval origins, this appellation is one of the youngest in France, having only become official in February 1999.
The Pennautier history dates back to the 1500s with the Château (castle) de Pennautier, built in 1620 by Bernard Reich de Pennautier, Treasurer of the States of Languedoc, is a the heart of the family Estate. In 1710, wines from Pennautier were served at the royal officers’ table in Versailles. The château was handed down from generation to generation and, in 1960, thanks to the insight of Alain de Lorgeril, father of Nicolas, the vineyards were replanted with new vine stocks, over reclaimed scrubland and at a higher altitude. Nicolas and Miren de Lorgeril are the 10th generation of vintners to inherit Pennautier, which they took over in 1987.
Grapes for this wine come from vineyards planted at 1200 feet of elevation on clay and gravelly soils.
Grapes are harvested in three different vineyard passes and vinified separately. After the final blend is decided the wine spends time in French oak for a brief amount of time.
