Domaine de Roally is owned by the Thevenet family, who has been making wine in Burgundy for generations. The former proprietor of Roally was Henri Goyard, an old schoolmate of Jean Thevenet's and a similarly minded vigneron. When Henri decided to retire after the 2000 vintage, Jean's son Gautier took over his 4 hectares, which are farmed and from which wine is made just like all things at the family estate in Bongran.
The vineyards are farmed organically and grapes harvested by hand. Fermentation takes place in old epoxy tanks with indigenous yeasts and is extremely slow, going well into the spring/summer following the harvest; malolactic fermentation generally occurs during the alcoholic fermentation. The wine is aged further in tank and in bottle and is released two years after the vintage. There is no oak involved in the winemaking.
