The nose offers dried oregano, white pepper, black cherry pie filling, and dried purple basil. Black cherry, plum, black pepper, and tobacco flavors broaden into red fruits as the wine opens up. Fine tannins support the flavors of this interesting and appealing food-friendly wine.
WINE INFORMATION
Ca’Nova was founded in 1996 by a father-daughter team. Their dream of owning a winery started by renovating the 1700's farmhouse which today houses the winery, the ageing cellar, the office and the tasting areas, and then by planting about 9 hectares of vineyards.
The Colline Novaresi appellation was created in 1994. It is located in northern Piemonte, includes 26 municipalities and is 40 km west of Milan and 30 km south of the lake Lago Maggiore. The vines are grown in the hills around Novara; the red grapes grown here are Nebbiolo, , Uva Rara (loc. Bonarda), Barbera, Vespolina and Croatina; the Erbaluce grape is the only white variety grown.
Grapes are grown at 300 m of altitude and are hand-harvested. After the harves the grapes are pressed and crushed and the stems are removed. Then the must is sent to a stainless steel steeper where the fermentation take place at the controlled temperature of warm temperatures for 7-8 days. The Bocciòlo cuvee is aged six months in big oak barrels. It is bottled in April after the harvest is released after a rest in the bottle of minimum 5-6 months before it is released for sale.
