WINE INFORMATION
The Champagne region is located in Northeastern France where the majority of grapes under production are the reds, Pinot Noir and Pinot Meunier and the white, Chardonnay. The region lies at the northern edge of the world's vineyard-growing areas, with lower average temperatures than any other French wine region. In this cool climate, grapes rarely ripen enough for standard winemaking, leaving growers with high acid grapes well-suited to the production of sparkling wines.
By French and European law, the mention of “Champagne” on labels is only to be used for wines produced in this region. Grower Champagnes are those Champagnes that are produced by the same estate that owns the vineyards where the grapes are grown. Récoltant-Manipulant is the term in French, and Grower Champagnes can be identified by "RM" on the wine label.
The small house of Le Brun Servenay owns a total of 7.5 hectares in the Côte des Blancs. About half of them are in the Grand Cru Côte des Blancs appellation with its chalky soils.
This is a non-vintage blanc de blancs blended from four different years and sourced exclusively from the Grand Cru villages of Avize, Oger and Cramant, where Patrick Le Brun’s average vine age is 40 years old. The base vintage is 30-35%, reserve wines roughly equal parts of 3 prior vintages. Primary fermentation occurs in stainless steel tanks with no malolactic fermentation allowed.
