This is essentially the Chateau Maris Les Planels (Syrah-based wine) without any sulfites added. (it says "sans souffre" on the neck of the capsule). The name means "to know how to age." In actuality, it is a wine that one should proably drink within 3 years of vintage since it has no sulfite protection, but boy, is it drinking beautifully. Medium plus body, rich and ripe, velvety, meaty, with savory undertones. There's nothing overripe here, yet it's seamlessly saturated. If you're into "natural wine," here's a superior example.
