"92 POINTS - The 2015 Chablis Dessus la Carriere, which was still in stainless steel when I tasted it (it was due to be bottled the following Tuesday), has quite a powerful bouquet with subtle scents of wild honey complementing the citrus/flint aromas. The palate is rounded and caressing on the entry with notes of walnut and smoke enhancing complexity on the powerful finish. As the northernmost wine district of the Burgundy region, the Chablis wine region’s cool climate produces wines with more acidity and less fruit than Chardonnay wines made from grapes grown in warmer climates. Like other Burgundian white wines, all Chablis is made from 100% Chardonnay and many wine experts feel that Chablis is the purest expression of the grape and allows the greatest expression of terroir.  Due to the soils, the climate, and the vinification, the wines often have flinty or steely flavors.  In comparison to the white wines from the rest of Burgundy, Chablis usually has no oak influence and is generally vinified in stainless steel tanks.
 
 
Located in the village of Chichée, just southeast of Chablis proper, the Domaine of Gilbert Picq et Ses Fils has been making wine from its small parcel of vines for several generations.  Gilbert has recently retired and handed over the reins to his three children.  Didier mans the cellars and makes the wines, Pascal maintains the vineyards, and Marilyn manages the business.  They make classic Chablis wines and starting in 2006 converted to 100% natural yeasts for all of their cuvees.  The vine yields are kept very low and the grapes must be hand harvested because the vines grow on 45 degree slopes.
