This organic rosé made from Bobal grapes combines black raspberry fruit with pomegranate, persimmon, grilled strawberry, savory herbs and bramble.

Bodega Sierra Norte was established in 1914 in Camporrobles, Requena, Valencia. They farm 322 hectares of certified organic vineyards and mainly focus on native varieties Bobal and Monastrell. The winery works alongside the Universidad de Valencia conducting research projects focused on the study of organic and sustainable viticulture, clonal selection of the Bobal grape, and the use of indigenous yeast.

The Spaish wine region of Utiel-Requena, named for two towns in the province of Valencia, has a fairly harsh climate – cold winters, hot summers, and little rainfall. The best vineyards tend to be located at higher altitudes, ranging from 2000 to 3000 feet. About 80% of vineyard land is planted to Bobal, a late ripening, dark-skinned grape variety indigenous to southeast Spain that produces deeply colored wine. In the past the wine was mostly sold in bulk, often as rosé. Today, however, young winemakers in Utiel-Requena are leading a movement that has significantly increased the quality of the wines, making velvety reds from Bobal grown at higher altitudes as well as working in the vineyard to reduce yields.

Grapes come from an organically certified vineyard with red clay soils, located at 900 m of altitude. The average vine age is 35 years old. This rosé is made using the traditional saignée method after the must has macerated with the skins. A temperature-controlled fermentation is then done, bringing out the full potential of this grape variety. The processes leading up to the bottling (fining, stabilization and filtering) are carried out in the gentlest way possible in order to preserve all of the wine’s character.
