Aromas are layered and complex, beginning with notes of spice and bramble, following through to dark cherry and plum. Medium weight with young tannins, it reveals flavors of earth, oil-cured olives, and red cherry. With air, this shows chocolate and tannins soften and integrate.
Argillae means “the spirit of the matter” and this winery is a combined effort of three Italian families—Bonollo, Di Cosimo, and Ascenzi. Their vineyards consist of hilly slopes 900-1500 feet above sea level and the soil is made up of clay and calcareous soils, infamously known as “calanchi”. Because the hills have east-west exposure, the vineyards are warm and sunny. The Argillae land is farmed sustainably and the grapes are hand harvested. The wine fermented and aged in stainless steel tanks.
