The 2015 Minervois La Liviniere Les Planels sports a deep purple color to go with killer notes of sautéed black cherries, black currants, licorice, pepper and cured meats. Chateau Maris is a 30-year-old, 75-hectare estate, 34 under vine, farmed biodynamically. The winery is built into a hill, largely underground, using hemp bricks, with no concrete or plastic. Labels are printed on recycled paper using organic soy ink. The grapes are harvested manually, vine by vine (rather than block by block). Les Planels, “the flat place,” is a vineyard above the winery where the grapes come from. This wine is fermented in wooden tanks and aged for 12 months in oak barrels, only15% new, designed to bring out a velvety texture rather than spicy or vanilla flavors.
