Tasting Notes

From the Distributor: Nearly 1,800 trees on standard rootstock grace the 15-hectare (37 acre) property. The soil is loamy, composed of an ideal combination of silt and clay. About thirty varieties of apples are grown on the property, predominantly from the sweet and bittersweet categories. The cider is fermented and aged in foudre for about eight months, then distilled in a traveling column still. The spirits go into large, well seasoned 400-liter barrels where their complex apple flavors develop.

 

Calvados Huard-Guillouet
Jean-Francois Guillouet hit the jackpot when he married the daughter of Normand distiller, Michel Huard. Calvados Huard-Guillouet is from the “AOC Calvados”. A blend of three fantastic vintages (’90, ’92, and ’05), this Hors d’Age bottling is the result of the collaborative efforts of Charles Neal and Jean-Francois.
