This is a complex pear cider with notes of lavender and sage, dragon fruit and some black licorice. additional notes of white peach, white nectarine, grapefruit pith and light florality. The palate is delicate and layered with pear skin, white currant, rosemary and soft mousse finishing with crushed seashell minerality.
This vintage was made with 60% eastate grown pears and 40% wild harvested pears from the National Forest. It is fermented with wild yeast.
