Tasting Notes

Straw yellow in color with golden hues. Aromas of apple butter and golden raisin. On the palate this is a refreshing wine with golden apple, biscuit, light toast and medium-size bubbles. It is clean and develops a creamy texture as it sits in the glass.

Cava (literally “cellar”) is Spain’s sparkling wine, made in the same way that Champagne is—a still wine goes through a secondary fermentation and ageing in the bottle.  Cava must be aged six months on the lees before being disgorged and sold.  The still wine in Spain is a blend of white grapes, traditionally those used here, although today some producers use Chardonnay and other grapes.  Ninety percent of cava is produced in the Penedès DO, although it can be made anywhere in the country.

Bodegas Pinord (the name means "Pine from the North") has over a hundred years of winemaking experience in the Penedès region of north-eastern Spain. Combining traditional methods inherited from their ancestors and state-of-the-art technology, the Tetas family produces wines and cavas that are recognized for their quality. They own 60 hectares of vineyards in Penedès, and also buy grapes from their cousins. During the last few years, they started to make wines in other appellations of Spain. Their vineyards are all farmed organically and some are even biodynamic.

The first fermentation takes place in stainless steel vats at a controlled temperature. The wine is then bottled along with yeast for the second fermentation which takes place in the bottle for 15 months.
