This is a delightful Burgundian Chardonnay. The nose gives subtle aromas of apples and apple skins, white flowers, old wood, and delicate orchard fruit. The palate offers minerality, focus and cut with crisp acidity and understated fruit. This medium weight wine is excellent with food or an apéritif.
WINE INFORMATION
Maison Simonnet-Febvre is one of the oldest wineries in Chablis. Founded by Jean Febvre, a cooper from Montbard, bought a wine merchant company in 1840 and began making sparkling Chablis, the precursor to today’s Crémant de Bourgogne. He married the daughter of a broker named Forgeot, and that surname was appended to his own. Jean’s daughter Melanie married Amedee Simonnet. When Jean died, his daughter and son-in-law changed the name to Simonnet-Febvre. Under four generations of family leadership, the company grew in the 19th century. The sons of Melanie and Amedee were very progressive, building a winery and loading dock, installing electricity and telephone service. They increased national and export sales of both still and sparkling Chablis. Their children and grandchildren continued the family business; it is the only winery in Chablis that has made traditional-method sparkling wine continuously since its inception. The estate was purchased by Louis Latour in 2003.
Grapes for this wine grow on slopes of silty clay at 300m asl in the Grand Auxerrois area just outside the border of Chablis. Vines have a south-southwest exposure and average 25 years old. Harvest is completely manual. Fermentation an ageing both take place in a combination of stainless steel tanks and oak barrels.
