This red begins with some earthy notes of oregano, cured black olives and forest floor. The fruit is mostly black with cocoa-dusted berries and black currants filling in the formidable tannic and acid structure that surrounds the wine. Saparavi originated in the country of Georgia and has found a comfortable place in the Finger Lakes. It is a teinturier grape, meaning that the skin gives considerable color to the wine. This is a good food partner, especially with heartier dishes.
