Tasting Notes

This is a stellar wine with great finesse. Aromas of clove, cardamom and apple are appealing. The palate shows elegance and precision as well as nice density. It is ripe and rounded with pretty yellow fruits like apricot, pear, quince, baked apple and apple skin and light savory and floral notes, including cardamom. Good intensity, energy and complexity with medium to more acidity.


The fact that this estate is crafting some of the very best dry wines in Germany is no fluke, rather a result of nearly obsessive winemaker Stephan Attman’s commitment to both dedicated cultivation of Deidesheim and Forst’s best sites and meticulous work in the cellar. Von Winning maintains some of the oldest parcels of Grosses Gewachs (grand cru vineyards) and practices organic and sustainable viticulture. The winery was founded in 1849 and Leopold Von Winning was one of the founding members of the VDP (quality classification system for vineyards) in 1907.

The estate’s premium wines are treated with a minimalist approach and with the highest respect in the cellar. Gentle clarification, natural and spontaneous fermentation and the abandonment of fining agents create wines with a distinctive indigenous and very elegant style. Pumping the juice or wine is never necessary in the gravity flow winery, allowing for minimal, and gentle vinification. Fermentation takes place in a combination of 500-liter and 1200-liter used barrels; the wine is left on the gross lees for 12 months before bottling.

Paradiesgarten is a site located at the top of the slope, just below the forest. The topsoil is loamy with a subsoil of sandstone; the winery calls it their coolest, most elegant site.
