Off all of South Hill ciders this one has more earthy and woodsy aromas. It begins with minerality and apple blossom with tart granny smith acid. The palate has a touch of honey, and bitter grapefruit mingle with crisp tannins and long finish.
This off-dry cider is a bittersweet-based classic Finger Lakes style made according to the traditional method. It is a blend of some of the classic English varietals and the best local apple varieties, including Harry Master's Jersey 18%, Rhode Island Greening 18%, Dolgo Crab 14%, Dabinett 13%, Geneva Bitter 5% and other sharp and aromatic apples is 32%.
