Tasting Notes
Honjozo has a small amount of distilled alcohol added to help extract flavor and aroma. It is characteristically light, mildly fragrant, and easy to drink.
Aromas of lemon citrus, fresh yeast, sushi rice, a lovely umami note of soy. This sake reminds us of Spanish Manzanilla sherry, in a way that is briny and reminscent of a sea breeze.
A clean pure style of sake, with white mountain flowers on the nose. It has a wonderful clean and soft silky texture. The cleansing acidity also provides good structure and there is a subtle fruitiness with hints of mango, peach and pineapple. 65% rice polishing.
