Tasting Notes

Henri Bardouin Pastis is a French star anise and wormwood flavored liqueur from Distilleries et Domaines de Provence, first produced in 1990. It is a blend of 65 different herbs and spices, many of which are secret.

Nose: Richly herbal, with excited notes of star anise sitting beneath simmering spiced notes of cardamom and pepper.

Palate: Decidedly green (and not just from the historical connection between Pastis liqueurs and Absinthe) with fresh, roughly chopped herbs, warming spices and, of course, the distinctive notes of wormwood. Slightly creamy texture with a long anise finish. 

Finish: Lasting spicy notes.

Overall: Quite complex, as you would expect from a liqueur with such an expansive recipe, but it's well balanced and enjoyable.
