Tasting Notes

Light aromas of minerals and cirtus are evident on the nose of this clean, crisp white composed of 100% Picpoul.  The grape name, Picpoul, means “lip stinger” and indeed, fresh citrus flavors continues on the palate along with the zippy acidity it is known for.

Founded in 1932, this Cave Coopérative is located in the top commune of Pomérols in the Coteaux de Languedoc. The soil in this seaside area of Languedoc, just west of the great lagoon of the Bassin de Thau, where the French coast starts its long curve downward toward Spain, is composed of clay and pebbles and fragments of limestone and fossil shells over marl, a perfect mixture for the grape’s dry delicacy, lightness and stony, sun-drenched nature.

The grapes underwent skin maceration for a few hours; followed be pneumatic pressing, double cold decanting, and temperature-controlled stainless steel fermentation.
