Tasting Notes

This is a classic Valpolicella Ripasso. It offers fresh sour cherry, rosemary, tomato leaf, violets, and wood spice aromas. Tannins are mild, having had time to soften. Flavors are complex and hard to tell apart with notes of  macerated cherries, dark chocolate, dried herbs, and other spices. The juicy acidity balances the well-integrated  oak. It is medium plus in body and length.

WINE INFORMATION

The Veneto is an old wine-producing region known for its excellence long before Rome was founded. Valpolicella lies north of Verona and about 30 miles east of Lake Garda, Italy’s largest lake.  It produces one of Italy’s finest and most powerful reds, Amarone della Valpolicella, made from grapes on the outside of bunches and dried.  Valpolicella Ripasso is made by using traditional methods, in which the second fermentation takes place on the lees of Amarone, which elevates the intensity, body, and alcohol level of the wine. When Valpolicella achieved DOC status, the zone was expanded from the better hillside area to the plains, where yields were much higher and quality lower. The original zone, where this wine is made, can use the term “Classico” on the label. The “Superiore” designation requires an extra 0.5-1% alcohol and longer aging.

Ca’ del Monte is a sixth-generation winery that produces both Amarone and Valpolicella Classico on its 20 hectares of south- and southwest-facing hillside vineyards. The plantings consist of 15-65-year-old vines on poor soils that stress the vines. Grapes for this wine come mostly from vines planted in 1985, though some date to 1970. Farming is non-certified organic. Negrara-Pelara is a rare grape used in blending; up to 10% is permitted.

The grapes went through primary fermentation with natural yeasts at controlled temperature in stainless steel. The secondary fermentation started six months later on the pressings of the Amarone grapes. The wine was aged 18-20 months in large French and Slavonian oak barrels and was bottled unfined and unfiltered.
