Tasting Notes

Lighter aromas of orchard fruits and a touch of melon lead to succulent pear, honeysuckle, and peach on the palate.  Medium-weight with fresh lemony acidity; clean and tasty.

WINE INFORMATION

Named after the views of the Simonsberg Mountain, Simonsig Estate is situated in the famous Stellenbosch Winelands just east of Cape Town. French Huguenot Jacques Malan first set foot in the cape in 1688, and over generations the family continued the love for wine and the wine industry. The late Frans Malan was the first person to produce sparkling wine using the Méthode Cap Classique (the Champagne or Classique Method) in 1971. He was also one of the creators of the Stellebosch Wine Routes. The winery understand the importance of social and environmental responsibility and produce their wines according to the guidelines of many recognized organization in order to ensure the ethical production of wine.

Higher rainfall in the 2019 winter months and the coinciding increase in dam levels resulted in better water availability for vineyards. Even bud break and a large number of flowering bunches showed early promise. Conditions remained favorable, except for some wind during flowering and rain during December that required meticulous vineyard management. Moderate temperatures and dry weather followed, resulting in an excellent season for white wines with above average yields, healthy and excellent grape quality.  It was an intense season that required immense focus and precise execution to manage and great potential.

Grapes were handpicked, crushed and some lots were given overnight skin contact. The juice was cold settled to brilliant clarity and inoculated with selected yeast strains, well known for producing very fruity wines. Fermentation temperature was kept between 12-14° C to ensure a nice and slow fermentation and optimal fruit flavor production.
