WINE INFORMATION

Domaine Pinon is a 22-hectare family estate in the Loire Valley situated within the commune of Vouvray. The viticulture and winemaking are managed by Ingrid and Damien Pinon, a dynamic husband and wife team who took over from Damien’s father a decade ago.  The estate is planted entirely of Chenin Blanc and produces only Vouvray, both still and sparkling. The vines, which range in age from 25 to 35 years, yield on average 45 hL/ha for the still wines and 55hL/ha for the sparkling wines. The soil is the emblematic Tuffeau, a sandy, fine-grained micaceous limestone, enriched with fossilized shells of ancient marine organisms, which impart a singular minerality.

The viticulture at Pinon is organic, although not certified as such, and all chemical herbicides, pesticides and fertilizers are scrupulously avoided. Agricultural techniques include grassing (cover planting between rows), plowing, and turning the soil. The wines are vinified and aged in the domaine’s fantastic cave that has been burrowed into solid limestone.

This completely dry Vouvray is harvested and vinified by parcel in small thermoregulated stainless vats. Batonnage is included, but not malolactic fermentation. It is aged on its fine lees in stainless tanks for 8-9 months.
