WINE INFORMATION

Proviva is based in the heart of Mendoza, Argentina. Proviva embodies the quest for a wine identity that is both original and authentic. Their estate-grown wines are produced exclusively from organic and biodynamic vineyards located in the best terroirs of Mendoza.

Grapes for this wine come from a single vineyard, Nuna, in Agrelo, Luján de Cuyo. Located at 960 meters above sea level, soil is mostly loam (including some sandy loam a meter deep) as well as limestone covered with gravel. Days are sunny and dry, but nights are very cool, making for slow, even ripening. Grapes are vinified naturally, with traditional cold maceration until natural yeasts kick in to start the fermentation. Fermentation takes place for 15 days at 78-86° F. The wine ages for a minimum of eight months, 30% in 225-L French oak barrels and 70% in concrete vats without epoxy sealing (unusual). As with all Proviva wines, the grapes for this wine are certified organic, biodynamic, and non-GMO; the wine itself is certified vegan.

Inkarri was the name of a mythical Inca king defeated and dismembered by the Spanish.

TASTING NOTES

Aromas of blueberries, earth/barn notes, black cherries and berries, smoked wood, and meat. On the palate this wine is juicy and well-structured. The medium-plus tannins support concentrated flavors of blueberry pie, blackberries in chocolate, and dried cherries. If you are able, open 30-45 minutes prior to drinking. It is medium in body and finish, and high in intensity.

FOOD PAIRING

A variety of grilled vegetables or meats makes for good eating (roast lamb or beef, grilled mushrooms or eggplant). Mature cheeses (Port Salud, Asiago, Morbier, Taleggio) are good partners, as is pizza with mushrooms or sausage. If you have access to game (winged or hooved), you’re in luck. Slow-cooked parsnips, carrots, and rutabagas with a touch of dried fruit are a great match.
