Beautiful salmon color, with elegant aromas of violets, strawberries, citrus, and nectarine. On the plate the mousse is creamy and elegant with fresh red berry flavors, floral tones, and tangerine. Cleto Chiarli is the oldest producer of Lambrusco in Emilia-Romagna.  The family were originally restaurateurs, with a trattoria in Modena; Cleto made wine for his patrons, and established a winery in 1860 to meet the demand from those who wanted to drink the wine at home.  The family owns 414 hectares divided into seven estates; 131 are planted to grapes, and the rest support the cows that provide the milk for Chiarli Parmigiano Reggiano cheese. The grapes are hand-harvested and fermented in stainless steel. The secondary fermentation is made using the Charmat method (like Prosecco.)
