WINE INFORMATION

The Champagne region is located in Northeastern France where the majority of grapes under production are the reds, Pinot Noir and Pinot Meunier and the white, Chardonnay. The region lies at the northern edge of the world's vineyard-growing areas, with lower average temperatures than any other French wine region. In this cool climate, grapes rarely ripen enough for standard winemaking, leaving growers with high acid grapes well-suited to the production of sparkling wines.

By French and European law, the mention of “Champagne” on labels is only to be used for wines produced in this region. Grower Champagnes are those Champagnes that are produced by the same estate that owns the vineyards where the grapes are grown. Récoltant-Manipulant is the term in French, and Grower Champagnes can be identified by "RM" on the wine label.

In the heart of Petit Montagne de Reims, twin brothers Pierre and Philippe Aubry have shouldered a legacy dating from 1790, with 16.5 hectares from 60 individual locations. Today, Pierre holds a national diploma in enology and Philippe in biology; they run this small company in a highly innovative way. The yield is low and only “coeur de cuvée” is used for the vintage wines. The grapes are divided into five classes according to their quality, and a considerable amount is vinified in old, traditional 205-liter oak barrels.

This current bottling is made with a 50% 2016 wine base and 50% of the perpetual reserve dating back to 1998. Grapes come from four different premier cru sites. The Chardonnay grapes are aged in used barrique while the others are aged in stainless steel for 24+ months.

TASTING NOTES

Wine Spectator, 91 Points: A creamy viscosity complements the texture of this harmonious version. An accessible crowd-pleaser, with lightly juicy acidity and delicate flavors of chopped almond, baked pear, saline and citrus. Disgorged January 2019.

FOOD PAIRING

Sparkling wine is a very food friendly wine and Champagne is no exception. Enjoy with foie-gras, shrimp and shellfish, smoked salmon, caviar, fried calamari, or oysters. Salami, fresh veggies, stuffed mushrooms, egg dishes, or spanakopita would also be complemented by this fine wine.
