Tasting Notes

If you like balanced oak, this is what you want California Chardonnay to be! Just over medium weight, this might remind you of a perfect pear and apple tart. It blends lightly cooked and spiced orchard fruits with elegant vanilla, almonds, toast, flint and butterscotch flavors, along with notes of pastry crust. This has juicy acidity yet is soft and creamy. 

Edna Valley, located a mere five miles from the Pacific Ocean in the Central Coast, has the longest growing season in California. The region boasts both oceanic and volcanic soils as well as cool temperatures caused by near constant maritime conditions of fog and wind. Ideal for Chardonnay, Edna Valley is known for elegant wines with well-balanced acidity.
The grapes are hand-picked at night from several Edna Valley vineyards to preserve the fruit’s delicate flavors. After a gentle whole cluster pressing, 50% of the juice is fermented in French oak barrels while the balance is fermented in stainless steel. The French oak portion was stirred twice a month which adds layers of complexity (biscuit notes and rounder texture). Only 35% of the wine goes through malolactic fermentation, so the result is a wine that’s not overly buttery. Prior to bottling, the various lots are blended, yielding a layered wine with bright fruit.
