This is a clean and focused Chablis. Reflecting the cooler vintage, this refreshing wine shows aromas and flavors of citrus, chalk, limestone and white melon. Light and refreshing with mouthwatering acidity.
Grapes come mostly from a single vineyard on a north-facing vineyard, near 1er Cru Forêts. Aged 50% in tanks and 50% in neutral barrels.
Originally from Quebec, Patrick Piuze moved to Burgundy in 2000 and worked with benchmark Burgundy producers Olivier Leflaive, Verget, and Jean-Marc Brocard before going out on his own. 2008 was his first vintage. Now, he is a negociant who seeks out arrangements in which he can manage the vineyards himself rather than simply buying must or juice. He focuses on obtaining old vines and has his own winemaking facility where fermentation occurs in temperature controlled stainless steel tanks. He does all the work by hand and uses a vertical press, as opposed to the traditional pneumatic press, to avoid future oxidation of the wine.
