Tasting Notes

This organic Dolcetto offers aromas of blackberry seeds, blackcurrants and lightly cooked, spiced plum compote. The wine is medium weight with flavors of blackberries, blueberries, violets, dried roses, and touches of smoke and tar.  This is juicy and crisp with light grip. It has medium tannins, medium acidity and good ripeness that is still fresh and texturally intense. 

The "Bric del Salto" cuvee is a combination of organic grapes grown in three different Dolcetto vineyards in Nieve.  Using indigenous yeasts, it is aged in stainless steel and is bottled after 6 months without fining or filtering.

Azienda Agricola Sottimano was started in the 1970's after Rino Sottimano graduated from enology school.  He has always farmed organically at this family winery where he works closely with his wife, Anna, and children, Andrea and Elena.  Their winemaking methods are traditional and non-interventionist, guarding the aromatics and purity of their fruit.
