Aromas are round and ripe with lemon zest, pear, apple, and almond paste.  The palate is all about texture—creamy—as well as refined flavors.  This dry white wine tastes of Asian pear, yellow apples, lemon zest,  a hint of toast and mineral with stone fruit on the finish.  Elegant and silky.

Novellum is a custom cuvee of Chardonnay grown and made by Jean Marc and Eliane Lafage for Eric Solomon.  The Latin name Novellum echoes Nouveau (new), and the recent vintage suggests a wine that saw little delay between vineyard and bottle.  The Chardonnay comes from organically farmed 30-year old vines on ocean-viewing schist and chalk.  Thirty percent spends time in French oak barrels and the remainder in tank on the lees of fermented Viognier.
