Tasting Notes
This off-dry cider was produced in the Traditional Method, and comprised of English bittersweets: Ellis Bitter, Ashton Bitter, Major and Bulmers Norman.
On the nose, aromas of summer meadow flowers mingle with ripe red apple, and thyme. Tastes of apple crisp, herbs and citrus peel. The mouthfeel is strong and elegant, the texture reminiscent of soft apricot skin. A balance of bright acid, suede-like tannin and sweet ripe pomme fruit carry the finish.

The Finger Lakes region of New York State produces exceptional apples because of its mineral rich glacial soils, intense summers and crisp autumn nights.  Eve’s Cidery, nestled in the hills of the Finger Lakes takes advantage of these flavorful apples by fermenting traditional cider apple varieties to create their sparkling cider.  Using the champagne method which includes fermentation in the bottle, Eve’s Cidery infuses the cider with tiny, elegant bubbles.
