Tasting Notes
From the producer: "On the nose, you’ll find aromas of dried roses, cooked cherries, raspberry coulis and oregano mixed with black pepper and smoke. Grilled strawberries and fresh raspberries are peppered with Asian five-spice and cardamom on an expansive mid-palate that finds every corner of your mouth. Mineral/savory components such as wet stone, flint, smoke, iron, dried roses and tea leaves are in equal parts to the fruit."
 
 
Each year, Forge Cellars makes a selection of certain barrels that they feel will benefit from longer aging.  These are some of the most expressive, distinctive and powerful Pinot Noirs from the harvest.  The selection is designated as their "Les Alliés" bottling.  Les Alliés means the allies, the friends, the united ones.
 
 
The vines for the “Les Alliés” Pinot Noir are grown on the east side of Seneca Lake.  All grapes are hand-picked with rigorous resorting at the winery, ensuring that only the best fruit is kept.  The fruit is then fermented, part whole cluster and part de-stemmed, in a temperature-controlled large French wood vat. No commercial yeasts are used, instead the juice ferments spontaneously with native yeasts, lasting over 21 days.  The wine is then aged for 12 months in mostly neutral French barriques, and bottled unfined and unfiltered.
 
 
Forge Cellars is a unique partnership between 3 like-minded and passionate friends:  Louis Barruol, Vigneron/Proprietor of Chateau Saint Cosme in Gigondas (Rhone Valley) France, Rick Rainey, audding wine grower and resident of Trumansburg, NY, and Justin Boyette, Winemaker/Partner of Hector Wine Company in Hector, NY.
